Lemon Rice Recipe | Step-by-step recipe of lemon rice


Lemon rice is a veg recipe, an often consumed dish in the South Indian region. Lemon rice is made basically with cooked rice, peanuts and tangy lemon juice — so-called lemon rice.

This is very simple and quick recipe. It hardly takes 10 minutes to make lemon rice if you have a cooked or leftover rice. It is the best option for newbies to start with. 

Lemon rice has delicious tangy and crunchy taste. You can prepare this dish for breakfast or even for a meal. It remains fresh for long time so you can carry it with you during traveling.

Lemon rice is itself a super tasty dish, but if you like you can eat it along with pickle, curd, chutney or buttermilk. You can also have papad with it. 


Recipe



Ingredients:

1. 1–2 tablespoon lemon juice.
2. 1 cup rice (or as per your requirement)
3. Peanuts
4. Cashews
5. 2 Tablespoon urad dal (black gram)
6. Turmeric powder
7. Asafoetida
8. Mustard seeds
9. 2-3 Tablespoon Oil
10. Curry leaves
11. Green chilies (optional)

How To Make Lemon Rice
Step-By-Step Recipe:


1. Soak urad dal (black gram) in water for 15 minutes.
2. Wash rice properly and keep it on a hot flame in a pressure cooker or pot. 3. Wait for 3 whistles to cook the rice in pressure cooker or for about 10 minutes in a pot.
4. Take out the pot of rice and let it cool for several minutes.
5. If you have leftover rice you use that also for making lemon rice and can skip above steps 2 and 3.
6. Take oil in a pan and heat it on low flame.
7. After oil gets hot, put some mustard seeds in it and let them crackle.
8. Put some soaked urad dal (black gram) in oil and fry it till it become slightly brownish.
9. Then add peanuts in oil and fry till they get crunchy.
10. Add 1/2 spoon turmeric powder and 1/2 spoon asafoetida in it. Also add some curry leaves to give good taste to rice. Also add some chopped green chilies if you want to make rice spicy.
11. Now, switch off the gas and then pour this mixture in a cooled rice.
Pour 1-2 tablespoon of lemon juice on rice. You may add more if you like more tangy flavour.
12. Mix it well with a rice until rice turns yellow.
13. So lemon rice is ready with a tangy and crunchy taste. Serve it with curd, buttermilk, pickle or papad. You can also eat plain lemon rice if you don't want to eat with curd or buttermilk.
